Ottolenghi - Black Garlic and Scotch Bonnet Marinade

 A friendship of opposites - black garlic and scotch bonnet. The fermented garlic softens the chilli's kick, creating a gentle sweetness and some spicy warmth. Brush it over aubergines before they hit the grill. Coat chicken thighs before roasting. Stir through vegetables as they cook.

Onions (33.3%), extra virgin olive oil (14.7%), date (13.6%), concentrated tomato (9.9%), water (8%), scotch bonnet chilli, sea salt, sunflower oil, garlic, wine vinegar (sulphites), cooked grape must, cumin powder, coriander, salt, acidity regulator: citric acid, preservatives: acetic acid, sulphur dioxide, sugar cane, cane molasses.
